Happy St. Patrick's Day!!!!  

Tonite, I am going to cook Green Enchiladas for supper!


The recipe goes like this: 

GREEN ENCHILADAS

Ingredients:
1 pound ground beef   
1 cup chopped onion
1 can cream of chicken soup
1/2 pound of longhorn cheese,shredded
1 t salt  
1 dozen corn tortillas
3/4 cup evaporated milk  
1/2 pound velvetta (cut in small chunks)
1/4 t garlic powder                      
1 small carton sour cream
2 pkgs of dry green onion dip mix 
1 small jar of pimentoes
1 small can chopped green chiles 
enough hot water or oil to soften tortillas

Preheat oven to 350 degrees.

Add salt and garlic to beef.  Brown beef lightly.  
In a saucepan, heat soup, milk and velvetta.  Heat until cheese is melted.
Add green onion mixes, green chiles, pimentoes, and sour cream.  
Add grated cheese and onion to the meat mixture.
Soften tortillas in hot water or hot oil in a skillet on stove top.
Fill each tortilla with meat mixture and roll tightly.  Place in a large shallow baking dish.  
Pour cheese sauce over tortillas.  Cover with foil, place on a cookie sheet and bake at 350 degrees for 30 minutes.

My old room mate in Austin, Texas, Joni Terrell, gave me this yummy recipe back in 1985.  I have been making them ever since.
